A good espresso does not need much – but the three basics have to match: grind size, amount and brewing time.
Grind the beans right before brewing so the aroma is preserved. If the espresso is sour and runs through too quickly, grind finer; if it tastes bitter and runs too slowly, grind coarser.
Stick to a consistent amount and only change one setting at a time. Step by step, you will find your favourite flavour.
